This is one of my most oft requested cookie when I go to a group function. Or for a very special friend who absolutely loves them and steals them whenever he can. 🙂
I like the fact that the are simple to make, tasty, and still semi-soft compared to ginger snaps. I’m not a fan of overly hard cookies and as long as I don’t over bake these, they turn out perfect!

Ingredients
- 3/4 cup Butter
- 1 cup sugar
- 1 Egg
- 1/4 cup molasses
- 2 cups Flour
- 1 tbsp ground ginger
- 1 tsp Cinnamon
- 2 tsp Baking soda
- 1/2 tsp Salt
- 1/2 cup sugar ; decoration

Instructions
- Preheat oven to 350°F
- Cream butter and sugar until smooth.
- Beat in egg and molasses.
- Add flour, ginger, cinnamon, baking soda, and salt.
- Roll into 1 inch balls.
- Roll balls into sugar and place on cookie sheet.
- Bake for 8-10 minutes.
